Barbecue cooking guide

Preheat the barbecue to a steady medium-high heat. Cook the burgers thoroughly, turning as needed, until piping hot throughout with no pink meat remaining. Do not rely on cooking time alone; thickness, starting temperature and equipment vary. Rest briefly before serving.

Simple tomato relish

Ingredients: 1 tbsp olive oil; 1 small onion, finely chopped; 2 garlic cloves, minced; 400g chopped tomatoes; 2 tbsp brown sugar; 1 tbsp balsamic vinegar; 1 tsp smoked paprika; salt and black pepper.

Gently soften the onion in the oil for 5–7 minutes. Add the garlic and cook for another minute. Stir in the tomatoes, sugar, vinegar and paprika, then simmer for 15–20 minutes until thickened. Season and cool slightly before serving. Check the labels of every additional ingredient for allergens.
