Barbecue cooking guide

Bring the steak towards room temperature for a short period before cooking. Rub with a little oil and season. Sear over a very hot barbecue or in a hot pan, turning as required. Rest for 5–10 minutes, then slice thinly against the grain. Cooking times depend on thickness, starting temperature, equipment and preference; follow appropriate food-safety guidance.

Simple chimichurri suggestion

Combine finely chopped parsley, 2 minced garlic cloves, 1 tsp dried oregano, 2 tbsp red-wine vinegar, 4 tbsp olive oil, a pinch of chilli flakes, salt and black pepper. Spoon over the rested, sliced steak. Check the labels of every additional ingredient for allergens.
