Cooking Instructions (Medium-Rare Recommended)

1. Bring to Room Temperature
Remove from the fridge 30–60 minutes before cooking.

2. Season Generously
Rub with olive oil, sea salt, and cracked black pepper.

3. Sear
Heat a heavy pan until smoking hot. Sear the Chateaubriand on all sides for 2–3 minutes until a rich crust forms.

4. Roast
Transfer to a preheated oven at 200°C (180°C fan):
• Rare: 20–25 minutes
• Medium-Rare: 25–30 minutes
• Medium: 30–35 minutes

5. Rest
Rest for at least 10–15 minutes before slicing to retain juices.

 

Chef’s Tip:
Serve with a classic béarnaise sauce, dauphinoise potatoes, and seasonal greens for a truly indulgent meal.
