Sarah Darlington's Tartare Sauce

Thick, piquant and creamy, this mayonnaise-based sauce is crammed full of pickled gherkins and capers. Battered cod, pan-fried sole or a Saturday lunchtime fish finger butty: you haven’t really tasted them at their best, until you’ve added a spoonful.
