Description

Perfect for roast potatoes: Par boil the potatoes (Maris Piper or a King Edwards are good), drain well and fluff up. Add plenty of goose fat to a roasting tin and place in a pre-heated oven for approx. 10 mins. at 220°C / 425°F, gas mark 7. As soon as the fat starts smoking, carefully add the potato chunks. Baste well and place them in the oven for approx. 45 mins. Turn and baste them occasionally to ensure they are golden and crunchy all over.
