Why is my steak tough? A butcher’s troubleshooting guide

Check cut, cooking method, thickness and slicing before deciding why a steak has eaten tougher than expected.

A tough steak does not always have one explanation. The cut, preparation, cooking and carving all influence how it feels when you eat it. Work through the possibilities rather than assuming longer cooking will fix every piece.

Was it the right cut for the method?

Quick-cooking steaks and slow-cooking beef have different structures. A piece intended for braising needs moist heat and time; treating it like a fillet can leave connective tissue firm. Check the product name and recommended method first.

Was it overcooked?

Lean steak can become dry and firm when cooked beyond the intended finish. A very hot pan combined with a thin steak makes this happen quickly. Monitor thickness and use a thermometer rather than giving every steak the same number of minutes.

Is the difficult part fat or connective tissue?

Some cuts contain seams and a firmer outer fat edge. Distinguish those from the centre of the muscle. Trimming a piece at the table may improve the experience, but it does not explain an entire steak that is unexpectedly chewy.

How was it sliced?

Cut across the grain to shorten the fibres. This is particularly useful for rump and broad sharing steaks. Cutting long strips with the grain can make a well-cooked steak seem much harder work.

What should you do next?

Keep the packaging and note how you cooked it. If a steak seems unusually tough for the cut, contact us with your order number and photographs of the meat, rather than only the label. Do not keep tasting meat if you are concerned about spoilage.

For the next meal, choose the cut around the cooking method and use thickness, temperature and slicing as your checkpoints.
