How to roast pheasant without drying it out
Protect lean pheasant breast with bacon and moist roasting, then check that the bird is thoroughly cooked.
Pheasant is leaner than many familiar roasting birds. That makes it easy to dry out if you cook by habit rather than checking the particular bird. A covered first stage and a little bacon can help protect the breast.
Ingredients for two
Use one dressed pheasant, one onion, one carrot, two streaky bacon rashers, a small knob of butter and 150ml suitable stock. A bird’s size and bone weight affect portions; supplement with substantial sides if sharing.
Prepare safely
Defrost fully if needed and follow any supplier instructions. Game may contain shot or fragments, so inspect carefully and warn guests where relevant. Never wash the bird. Keep its juices away from ready-to-eat ingredients.
Heat the oven to 160°C fan or 180°C conventional. Put chopped vegetables in a small roasting dish, set the pheasant on top, rub a little butter over the breast and drape with bacon. Add stock around it and cover.
Roast and check
Begin checking after approximately 35–40 minutes, allowing longer for a larger bird. Uncover towards the end for colour if necessary. The thigh and thickest breast should be thoroughly cooked: check with a clean probe for 75°C held for 30 seconds.
Bacon colour and clear surface juices are not substitutes for checking the centre. If the legs need longer, a careful jointed finish can protect a breast that is already done.
Rest and serve
Rest briefly, then carve with a sharp knife. Strain the pan juices and reduce for gravy. Serve with bread sauce, cabbage or roast roots.
For a bird that seems particularly mature or firm, ask about a braising method instead. A gentler covered cook may suit it better than an uncovered roast.
