Goose fat or beef dripping: which makes better roast potatoes?

Compare goose fat and beef dripping for roast potatoes, with a practical method for a crisp surface and fluffy middle.

Both goose fat and beef dripping can make excellent roast potatoes. The choice is largely about flavour and what suits the rest of your meal: goose fat gives a savoury poultry character, while beef dripping brings a more pronounced beefy note.

Choose the potato first

A floury potato such as Maris Piper or King Edward is a good starting point. Cut pieces to a similar size so they finish together. For four people, start with about 1kg peeled potatoes and three tablespoons of your chosen fat, adjusting for appetites.

Parboil and dry

Put the potatoes in cold salted water, bring to a boil and simmer until the outside is beginning to soften while the pieces still hold their shape. Drain well. Let steam escape, then gently shake the pan to roughen the edges.

Wet potatoes can spit when they meet hot fat. Allow surface moisture to evaporate and lower them into the tray carefully.

Roast with room

Heat the oven to 200°C fan or 220°C conventional. Warm the fat in a sturdy roasting tray, then add the potatoes carefully and turn to coat. Give them space: a crowded tray encourages steaming.

Roast for roughly 45–60 minutes, turning once or twice, until crisp outside and tender inside. Adjust the temperature if they colour before the centres soften.

Which should you buy?

Choose beef dripping beside roast beef if you enjoy a stronger savoury flavour. Goose fat works well with poultry and festive dishes. Neither is suitable for vegetarian guests; use a suitable vegetable oil and a separate tray for their portions.

Good drying, hot fat and enough space usually matter more than choosing one of these two fats over the other.
