British Flat Iron Steak – Min. 500g — catalogue illustration; presentation may vary.

What is flat iron steak, and how should you cook it?

Meet flat iron steak: a shoulder cut that rewards a hot pan, thoughtful slicing and simple accompaniments.

Flat iron steak is prepared from the shoulder, with the tough connective seam removed during butchery. The result can be a tender, flavourful steak without the price or shape of a fillet.

Choose by thickness

A broad 500g piece may be suitable for sharing, but weight alone does not tell you how long it needs. Look at the thickest and thinnest sections. Ask your butcher how the particular piece has been prepared if you are unfamiliar with the cut.

A straightforward pan method

Defrost if necessary, remove packaging and blot the surface dry. Season just before cooking. Heat a heavy frying pan, add a little oil and sear without crowding it. Turn to cook the other side, then adjust the heat so you can control the centre without burning the crust.

Use a thermometer if you are aiming for a specific doneness. Lower-doneness steak methods apply only to intact whole-muscle beef with all exposed surfaces thoroughly seared. Follow the product instructions and choose thorough cooking where appropriate.

Slice across the grain

Rest the steak briefly, identify the direction of the muscle fibres, and cut across them into thin strips. This shortens the fibres each bite contains and makes a noticeable difference to the eating experience.

What to serve alongside

Try potatoes and a mustard dressing, or sliced steak over warm grains and vegetables. A parsley, garlic and oil dressing works well too. Add sauces after slicing rather than hiding the crust beneath a heavy marinade.

Flat iron is a useful cut for cooks who want flavour and value. Treat it like a steak, not like a shoulder casserole, because the butcher’s preparation has changed how that piece should be cooked.
