Reverse-seared thick steak: when and how to use the method
Understand reverse searing and why gently cooking before browning can help with a particularly thick steak.
Reverse searing means cooking steak gently first, then browning it at the end. It is useful for thick steaks because the centre has time to warm without the outside spending the whole cooking period over fierce heat.
When it works best
Choose an intact, thick-cut ribeye, sirloin or similar steak. A thin steak can cook through during the sear alone, so adding an oven stage may make it harder to control. Keep your ordinary pan method for thinner cuts.
Set up the oven
Blot the surface dry, season and put the steak on a rack above a tray. Heat the oven to around 100–110°C fan. Use a probe or check periodically with a clean instant-read thermometer in the thickest centre.
Decide the final doneness in advance and stop the gentle stage a few degrees below it. The finishing sear will add heat. Record the thickness and temperature rather than trying to copy another cook’s timing exactly.
Finish in the pan
Heat a sturdy pan, add a small amount of suitable oil and brown both faces and the edges. Use tongs rather than pressing the steak flat. Introduce butter only towards the end if desired, so it does not burn while the pan heats.
A safety distinction
Lower steak doneness targets are for intact whole-muscle beef whose exposed surfaces are thoroughly seared. They are not guidance for burgers, rolled joints or mechanically tenderised meat. Follow the label and choose thorough cooking for anyone who should avoid undercooked meat.
Rest briefly before slicing. Reverse searing offers control, but it still depends on measuring and watching rather than walking away from a hot pan.
