Gammon and ham: what is the difference?

Understand cured pork labels and why gammon usually needs cooking before it can be served as ham.

Gammon and ham are closely related, which explains why the words sometimes appear together in recipes. The practical distinction at the meat counter is whether the cured pork is raw and needs cooking, or is already ready to eat.

What is gammon?

In normal UK retail usage, gammon is cured pork from the hind leg sold for you to cook. It may be smoked or unsmoked, supplied as a joint or cut into steaks. Curing gives a characteristic flavour, but it does not mean you can skip the cooking.

What is ham?

Ham generally refers to the cured leg meat after cooking, or to another ready-to-eat cured product prepared by its specified process. A cooked gammon joint becomes the ham you slice for sandwiches. There are also specialist dry-cured hams, so always read the exact product label.

Smoked does not mean cooked

Smoking is a flavour and processing distinction, not a dependable indication of readiness to eat. A smoked gammon still needs cooking unless explicitly labelled otherwise. Likewise, a pink interior is not a reliable cooking test because curing affects the colour.

Buying for your menu

Choose a raw gammon joint when you want to cook and glaze your own centrepiece. Choose ready-to-eat ham when you want a straightforward cold plate. For gammon steaks, follow the label and cook them thoroughly in a pan, oven or grill.

Store both according to their packaging and keep raw gammon away from ready-to-eat foods. If a recipe asks for ham but you have raw gammon, cook it safely first; the two are not interchangeable at the moment they leave the fridge.
