If suitable braising beef remains firm, it may simply need longer. Test one piece with a fork. It should yield without needing force. Extend cooking in sensible intervals, checking liquid and keeping the pot covered as the recipe requires.

Watch the heat

A violent boil is not a shortcut to tenderness. Use a gentle simmer or a low oven setting suitable for your casserole. Make sure the vessel retains enough moisture, particularly if its lid does not fit tightly.

Check size and consistency

Large pieces take longer than small ones. Uneven chunks can leave some ready while others remain firm. Next time, use similar sizes and make a note of the actual cooking time rather than treating the first recipe estimate as a deadline.

Can you rescue it?

For a suitable braising cut, add a little hot stock if necessary and continue gentle cooking. If the meat has become dry, more cooking may not restore its juiciness; slicing or shredding it into the sauce can help the serving texture.

Do not leave a finished casserole lukewarm while waiting for dinner. Keep it safely hot or cool it promptly for refrigeration and reheat thoroughly later.
