What is boerewors, and how do you cook it?
A guide to South African-style boerewors, with gentle cooking, careful handling and ideas for serving.
Boerewors is a sausage associated with South African cooking, often served from a coiled shape. Recipes vary, so check the actual product ingredients rather than assuming every version contains the same meats and spices.
Choose your flavour
Our range includes traditional South African-style boerewors and a chilli and garlic version. Choose according to your household’s taste and read the label for allergens. The name describes the style; it does not replace the product’s provenance or ingredients information.
Keep the casing intact
Avoid repeatedly piercing the sausage, which allows juices to escape. Handle a coil with a wide spatula or suitable tongs so it does not tear. Defrost fully if frozen unless the supplier gives a cook-from-frozen method.
Pan cooking
Use a moderate heat and a little oil if needed. Cook gently, turning the coil for even colour. A fiercely hot pan can blacken the casing before the centre is done. If required, lower the heat and continue according to the pack’s method.
Barbecue cooking
Use a controlled area of the grill rather than cooking directly over strong flames. Turn carefully and move away from flare-ups. Browning is useful, but the centre must also be thoroughly cooked.
Check the thickest point with a clean thermometer for a safe endpoint such as 75°C for 30 seconds. Follow the product instructions if they require a different validated method.
Serve simply
Try bread rolls with onions and a tomato relish, or potatoes and vegetables. Let diners add chilli sauce themselves, particularly with an already spicy sausage.
Boerewors rewards patient heat and gentle handling. Treat the casing and the centre as separate checks, and you will avoid the common mistake of a dark outside with an unfinished middle.
